  • Roast beef sliced
  • Red onion rings
  • Red radish sliced thinly

BEEF BURGER WITH GC EGGPLANT KASAUNDI

Ingredients:

  • Beef pattie [see recipe below]
  • Caramel garlic onions [brown onions sliced thick and slow-cook in olive oil and garlic cloves until caramelised]
  • Poached egg
  • Sunflower sprouts
  • GC Eggplant Kasaundi

Beef Pattie

Ingredients Quantity Method
Lean minced beef 1kg
  1. Combine all the ingredients in large bowl
  2. Mix well and shape into patties
  3. Cook on barbecue or non-stick fry pan on both sides until cooked through.
Chopped brown onion 1 medium [150g]
Garlic crushed 1 clove
Egg beaten lightly 1
Salt ½ tsp
Worcestershire Sauce 2 tsp
Grated cheddar 25g [1/3 cup]

STEAK SANDWICH WITH GC CHILLI AND LIME SAMBAL

  • Field mushrooms brushed with olive oil and grilled

Ingredients:

  • Baked chicken thigh or breast slices (marinated in Canola oil, garlic and salt)

  • Cos lettuce
  • Cheddar sliced
  • Carrot and beetroot grated
  • GC Tamarind Chutney

Ingredients:

  • English spinach
  • Cucumber sliced

  • Yoghurt and fresh mint puree
  • GC Cucumber Achar.

  • Blanched and julienned snow-peas
  • Green Chilli Jam Mayonnaise [250ml whole egg mayonnaise blended with one tablespoon Green Chilli Jam]

  • Baked chicken thigh or breast slices (marinated in Canola oil, garlic and salt)
  • Shortcut rindless bacon grilled
  • Iceberg lettuce shredded

  • GC Green Chilli Jam Mayonnaise [250ml whole egg mayonnaise blended with one tablespoon Green Chilli Jam]

  • Roasted butternut pumpkin roughly chopped
  • GC Chilli and Lime Sambal.

VEGETARIAN BURGER WITH GC TAMARIND CHUTNEY

Ingredients:

Vegetarian Burger Filling

  • Vegetable and potato pattie [see recipe below]
  • Red onion sliced
  • English spinach
  • GC Tamarind Chutney.

Vegetable and potato pattie

Ingredients Quantity Method
Carrots chopped fine and steamed 1½ cups
  1. Combine in large bowl: carrots, potatoes, peas, corn, chillies, coriander, bread, salt, flour, tomato paste, egg and GC Xec Xec Curry Paste.
  2. Taste and add salt if required.
  3. Add breadcrumbs gently while mixing the above, until the mixture holds together. [NOTE: Expect the mixture to be ‘sticky’].
  4. Form a medium-sized ball of the mixture in your palm, using breadcrumbs to help shape the pattie. You can also use a spatula to shape the pattie on a cutting-board.
  5. Fry cutlets in shallow oil in non-stick fry pan, only turning gently when one side is well-browned – to prevent patties from breaking up.

FISH BURGER WITH CUCUMBER ACHAR

Ingredients:

  • Fish cakes [see recipe below]
  • Red onion sliced
  • Asian greens blanched and iced
  • King Oyster mushrooms sliced and sauteed with fresh ginger finely diced
  • GC Cucumber Achar

FISH CAKES

Ingredients Quantity Method
Carrot grated finely 1 small [70g]
  1. Squeeze moisture from carrot
  2. Process fish, sauce, sugar, coriander, paprika, rind, garlic, ginger and green onions until combined.
  3. Transfer mixture to bowl and add carrot and beans, and mix well.
  4. Divide mixture into 8 patties.
  5. Toss patties in flour, shake away excess flour.
  6. Fry patties in shallow oil in non-stick fry pan, only turning gently when one side is well-browned – to prevent patties from breaking up.
