Prawn Balchao Crepe/Spring Roll Filling

Ingredients

  • 100g Brown onions, chopped
  • 100g Green Peas, blanched
  • ½ bunch Fresh Coriander Leaves, chopped
  • 2 Roma tomatoes, de-seeded & diced
  • 200g PRAWN BALCHAO
  • 15 ml  Oil

Directions

Fry onions in oil until golden-brown.
Add all other ingredients and bring up to heat.
Divide mix into five portions for Crepes.

For variations, add any of the following to the mix:

  • Sweet corn kernels blanched – 100g
  • Grated carrot – 100g
  • Spring onions, sliced fine – 2
  • Diced cooked potato – 150g
  • Green chilli de-seeded, finlely chopped – 2
